One choux pastry, made this morning, sold until it runs out. There is no second thing.
Six on the shelf at a time, refilled from the back. When the batch is out, the door shuts, whatever the clock says.

Six empty places, all day
Everything leaves the shop wrapped in the same blue. One colour, one weight, no bag.
It is the only part of the shop that ever goes outside.
Paris 9e, running up towards Montmartre.
885metres
The street runs 885 metres and rises the whole way. Most people are advised to start at the top and walk down. The shop is up near the top, on the steep part.
≈200shops
Around two hundred shops and restaurants over that half mile. It has been a food street for a long time, and a lot of it still closes on Mondays.
IIIecentury
Saint Denis, the first bishop of Paris, was beheaded on this hill. The legend has him picking up his head and walking north. Martyrs for the street, Montmartre for the hill above it.
The bench
Odile Brivet spent nine years on the entremets bench at a grande maison.
She opened this shop in 2019 to do the opposite of variety.
Now she makes one choux pastry a day and sells it until it runs out.
There is no case full of options: one vitrine, six at a time, refilled from the back.

The counter
The slate goes up when the batch comes out of the oven. Once the vitrine is empty the door shuts, whatever the time says.
